4 tablespoons Olivio® Buttery Spread
1 lb bulk Italian sausage
8 large eggs
Splash of half and half or whole milk
A few shakes of Louisiana hot sauce
6 ounces of shredded Cheddar cheese
1 plum tomato seeded and diced
Dash of Salt and pepper

4 large eggs, beaten
4 whole-wheat tortillas
2 teaspoons Olivio® Buttery Spread
1 can non-fat refried beans
1/2 cup chopped onion
1/2 cup green or pepper, chopped
2 cloves minced garlic
1/4 cup low-fat sour cream or
non-fat plain yogurt
1 small jar salsa
1/2 teaspoon cumin

Preheat skillet over medium high heat. Add Olivio® Buttery Spread - made with Mediterranean olive oil. Add sausage – brown and crumble the meat – 5-6 minutes. Remove sausage and drain some of the fat. Whisk the eggs together and combine with half and half or whole milk, Louisiana hot sauce, salt and pepper. Scramble the eggs until soft and add cheese until it melts. Remove from heat and combine sausage and eggs. Garnish with diced tomato.

Wrap tortillas in foil and warm in oven at 350 for about 10 minutes. Melt Olivio® Buttery Spread -made with Mediterranean olive oil in large skillet over medium heat and sauté onions, garlic and bell peppers until tender. Add cumin. Warm beans in sauce pan. Whisk eggs and stir into vegetables until scrambled. Fill tortillas with 1/4 of eggs and beans. Top with sour cream and salsa.

2 teaspoons grated orange rind
8 1/2 inch slices day old bread
1/4 cup honey
1 cup Corn Flakes (crushed)

1/4 cup minced celery & onions
3 tbsb Olivio® Buttery Spread
1 cup Uncle Ben’s™ Converted Rice
2½ cups College Inn® Chicken Broth

In a shallow dish, beat eggs, egg whites, milk and 1 teaspoon grated orange rind. Soak bread a few slices at a time in egg mixture and coat with crushed corn flakes. Olivio® Buttery Spread - made with Mediterranean olive oil in a skillet over medium high heat. Add slices of bread and cook until golden brown – 2-3 minutes per side. Remove to a platter and keep warm. Meanwhile, in a saucepan, heat two tablespoons of Olivio, honey and orange rind over medium heat stirring until warm – about 1 minute. Garnish with orange slices and serve with sauce.


Sauté minced celery and onions until soft in about 3 tablespoons of Olivio® Buttery Spread - made with Mediterranean olive oil. Add 1 cup of Uncle Ben’s™ Converted Rice and sauté until translucent. Add 2 1/2 cups of College Inn® Chicken Broth. Bring to a boil and simmer for 30 minutes stirring two times. Serve with chicken and vegetables or your favorite meat. Great for reheating and you can mix in leftover vegetables or meat.
